WHere is a simplified take on a beverage featured on the seasonal cocktail list. It's a batch prepared mix that's bursting with the essence of a festive period, rendering it perfect for a holiday party. Any leftover syrup for brunch beverages, sweets, or for additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 guests
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Combine all the components in a saucepan, heat until it reaches a light boil, agitating until the sugar dissolves. Next, remove from the stove and let it to cool down completely. Decant into a clean bottle, close it and refrigerate it in the refrigerator, it will last for around one month.
For the Batch Mix: Combine the specified spirits and syrup into one large bottle, leave to sit for 60 minutes, then filter it preferably using cheesecloth, to ensure it's perfectly clear.
For serving: Measure 85ml of your premix into a mixing glass containing ice, and stir lightly for a minute to chill. Pour into a chilled martini glass or a similar vessel, decorate with some cranberries and finish using a quick spritz of the essential oil over the top.
